Perpetual solera between 2005 and 15.
Complex and more generous, some tropical fruits like passionfruit, mango, lemon curd, some aldehydic notes of grass and perhaps sorrel with still a clean saline mouthfeel and strong fine filigree structure. Chalky long finish tingling with acidity all the way to the very long finish.

Had a glass of this interesting champagne at my go to wine bar. Solera method (40% reserve wine) and made with all 7 allowed grapes in Champagne! Do you know them all??
Okay: 18% Chardonnay, 18% Pinot Meunier, 17% Pinot Blanc, 15% Petit Meslier, 14% Pinot Noir, 10% Fromenteau, 8% Arbanne.
The solera method shows, nutty, salty, spicy, dried fruit. Fresh and lively, fine concentration, balance and great creamy texture. A pretty wine, and also a serious wine that will go well with a variety of fruit.

This champagne is very special and I don't try to compare with classical Brut. Dry, high acidity and very layered. Aroma of white flowers and citrus. Taste is lemons,nectarines and ripe persimmons. Very tasty finish!

Les 7 had an lovely, sensual smooth texture which was surprisingly balanced by the racy acidity and chalky finish. Long life ahead!

Extremely unconventional Champagne. Made from 7 varieties: 3 commonly used nowadays plus 4 used for champagnes a century ago; 3 black and 4 white. Extremely dry, acidic, crisp. Green apples, citruses, some iodine, with light brioche notes. Would probably go perfect with oysters however we didn't have them.

Smell is floral, with pastry, dried fruits, ginger cookies, yeast, vanilla, lemon and bruised apples. 4+ First of all I have to thank Fabio for sharing this beauty. Blend of 7 different varietals, 4gr/l dosage, dégorgement 07/15, natural fermentation in barrels of 10 years, no malolactic, 6 months on the lees. It's a lovely symphony of pleasures, a patchwork of different hints and notes typical of the varietals used to assemble this wild stallion not yet properly tamed by time.. Raw, wild, innocent... lovely!

A blend of all 7 (yes, 7) permitted champagne grape varieties. When first opened, this was fruity and tart and, if anything, perhaps lacking the complexity I was expecting. With a bit of time, it dramatically opened up in a way I haven't experienced with champagne before and toasty flavours became apparent. Very distinctive champagne. Bone dry.

The Laherte style in all its splendor. Les 7, as its name indicates, is a blend of the seven varieties used in Champagne. Barrel fermentation, no malolactic, perpetual cuvée 2005-2011, no dosage. The classic umami stamp presents a fresh and deep nose of burnt bread and iodine, lime zest, red apple and sulfurous minerality puffs. Outrageously crispy mouth, infinitely citrusy, amazingly harmonious. Perfect balance between smoothness and dryness, it's straight, juicy, finely mineral, softly balsamic.

одно из лучших шампанских что я пробовал. Однозначно статусный и роскошный напиток в духе лакшери. Чувственный тонкий перляж и тропические оттенки вкуса создают мягкость. Послевкусие насыщенное и продолжительное. Отмечу освежающий живой букет невероятной сложности. Просто шедевр без лишних слов!

Тончайший перляж подчеркивает многогранный букет из цитрусовых, экзотических фруктов, пряностей и травянистых нот шалфея и хвои. Четко выражена минеральность, а в послевкусии появляется лайм и цветы. Финиш продолжительный и переливающийся.

О богатстве вкуса этого вина можно рассуждать часами, делая небольшие глоточки, чтобы вновь окунуться в эту глубину. Настоящий ароматический экстаз. Это вино не зря входит в различные рейтинги. Не знаю, можно ли такое подавать на фуршете, как по мне, это эксклюзив для истинных ценителей.

Les 7 is a blend of the traditional 7 grapes of Champagne: PN, PM, CH, PB, Fromenteau, Petit Meslier and Arbanne, planted in Chavot in 2003 on a clay/limestone topsoil with silex and chalk underneath. Aged for 6 months in used pièce and no malo. Reserve perpetuelle (solera) from 2005.
The wine is positively electrical under any points of view. Starts off with small wild strawberries and raspberries to then adding some apples, curdy grapefruit, singed orange zest, wax, smoked almonds, lightly autolyctic..

Thin and elegant buble, nice depth but not heavy. The tension comes back in Final, superb class.

The art of blending is showcased here, beautifully crafted with finesse, elegance, balance and sophistication. A very classy drop!

Made out of 7 different grapes, half grown biodynamic and the other half organic. I’ve found these obscure producers striking. Citrus, grapefruit on the nose + some honey sweetness, with crisp lemon acidity and mineral finish. Thanks for sharing, Joe!
